Meals to Cancel out the Cookies (sort of)

What’s the deal with the holiday season and cookies? I’ve been eating cookies all day long.

Coffee and a cookie.

Lunch then a cookie.

Kids all napping…. I think I’ll have a cookie.

Dinner then a cookie.

Holiday party… cookie. cookie. cookie.holiday cookies

I’m up to my neck in cookies. Anyone else? In an attempt to balance out the cookie madness I’m sharing 3 easy, high protein, low carb dinners to get your blood sugar back in check. Plus did I mention they are super easy and kid friendly?

Recipe 1: Potato Spinach and Ham Frittata from Musings of a Housewife

Note: I loosely followed this recipe based on ingredients I had on hand. I used fresh arugula in place of her spinach and served with balsamic asparagus.

Recipe 2: Slow Cooker Salsa Chicken from Making Lemonade Blog

Note: This might be the easiest recipe of all time! Super versatile dish that can be served a number of ways. I used only one larger jar of salsa (the recipe called for 2) and made sure it was mild so my kids could enjoy it.

Recipe 3: Honey Mustard Chicken Tenders

1 lb chicken breasts cut in strips

honey mustard dressing

panko bread crumbs

butter or olive oil for drizzling (optional for richer flavor)

Marinate chicken in honey mustard dressing for at least one hour. Preheat oven to 375 degrees. Shake excess dressing from chicken, dredge in bread crumbs, drizzle with olive oil or butter (optional) and bake in oven for about 20 mins or until internal temperature reaches 165.

Note: I’ve been baking these on a wire rack over a cookie sheet so the bottom doesn’t get mushy. Broiling for the last 2 minutes also gives the top a golden crisp. Serve with honey mustard dipping sauce and roasted sweet potatoes.
