I am thrilled to kick off my Summer Foodie Series with a recipe from one of the best chefs out there…. my MOM! Everything always tastes better when she makes it! And when I pay her that compliment she tells me it is probably because I didn’t have to make it….touche. Feeding 5 hungry mouths for years has given her plenty of practice! Here is a meal that she makes in bulk, freezes and distributes to all her kids for a quick weeknight meal. I know – how lucky are we? Summer means lots of burgers on the grill, but try out this lighter version that can be made right on your stove top (because we all know that every time we light the grill, it rains….). I hope you enjoy this series and get some new recipes in the rotation. Here goes!! Meet my mom!

Recipe: Turkey Sliders with Brie and Cranberry
Ingredients:
1.5 pounds dark meat ground turkey
1 egg
2 stalks celery minced
1 onion minced
3/4 cup corn breading stuffing mix with cranberries (I use whole foods brand) smash in bag so its fine
1/2 cup dried cranberries
1tsp kosher salt
1tsp pepper (to taste)
Optional for serving:
1 can cranberry sauce
sliced brie
Recipe:
Saute celery and onion in olive oil until clear, not browned. Combine ground turkey, beaten egg, smashed corn bread stuffing, cranberries and salt/pepper. When celery/onion mixture is room temperature, combine with turkey and mix all together. To cook, coat a pan with a little olive oil and sauté until burgers are not pink (internal temperature should be 165 degrees). Serve with canned cranberry sauce and sliced brie.
What else do we need to know?
The success of the turkey burgers is the amount of celery and onions added… more veggies make for better burgers and less dry! You can also add chopped italian parsley. If you don’t have stuffing, you can use breadcrumbs, but add a little poultry seasoning for better flavor. I triple the recipe and individually wrap each turkey burger in saran and then put 6 in freezer bags.
Did you notice there is no bun in this recipe? Trust me, you won’t even miss it!
